Staff picks: Our favourite global eats!

What’s the most memorable dish you’ve eaten on your world travels? Perhaps paella in Spain? Or beignets in New Orleans? We asked some of our food- and travel-obsessed staffers to share their most mouth-watering food memories from around the world. The result? A lip-smacking collection of global eats to add to your food and travel bucket lists. Just try not to salivate over your keyboard while reading this.

Perfect Paella in Spain:

“While we were impressed with everything we ate in Barcelona, the paella stood out in our minds. Fat golden grains exploding with flavour, big juicy prawns and a beautifully caramelised crust. We were in heaven.”

A meal that gives back in Vietnam:

“Crab Sashimi in Osaka …. Paella in Barcelona with gallons of Sangria! And I loved all of the food that came out of the kitchen at KOTO, Hanoi Vietnam.

“I don’t think I was prepared for liquid cheese on my hot dog back from Liberty Island in NYC – how do Americans EAT that? Most bizarre thing I’ve eaten, but definitely made me feel like I was in New York!”

“Most memorable, or favourite? I tried both snails [escargot] and frogs legs in France, which were pretty memorable. Favourite is harder though. Goulash in Budapest, deep dish pizza in Chicago, gelato in Italy, Clam Chowder in Boston…”

“Lamb with prune tagine is a classic Moroccan dish that combines sweet prunes and meat with the fragrant spices of ginger, saffron, cinnamon and pepper. The meat is so tender and the prunes give the dish a distinct added flavour- a great dish to soak up with the local bread.”

“One of the most unique foods I have tried during my travels is Kokoda (pronounced ‘ko-kon-da’) which is a Fijian raw fish salad served in coconut cream. The fish is marinated in lemon juice overnight then served with coconut cream, tomatoes, capsicum and onion.”

A creamy classic in Italy:

“The most memorable dish I came across was while walking the back streets of Venice (trying to avoid the tourist crowds). I came across a gelato shop. For $5 I got a bowl of the BEST chocolate gelato I have ever tasted. Sitting on steps of canal to eat it wasn’t half bad either!”

“There is nothing better than a good curry, but one made in India you just can’t beat. A meal to remember for me was a cooking demonstration at Banjaar Tola in Kanha National Park. The chef prepared a vegetarian curry with the ingredients from their local garden and fresh breads. No meat and only fresh herbs and spices. A sensory delight and highlight for sure.”
